October Poll Results and Quick Pasta Options

Hey peeps!

The results are in! When you don't have a lot of time to whip up something fabulous, the majority of you turn to.... pasta! I definitely do, too. Pasta is so versatile and fast, and also delicious. I could eat pasta every day of the week and never have the same meal twice.

In honor of our beloved pasta winner, here are some of my favorite ways to make it!


Spaghetti (with or without meatballs) (the classic!) - even using jarred sauce and frozen meatballs, this always tastes good.  I use whole wheat pasta and serve with a quick salad.

Penne with White Wine Sauce - I looooove to saute shrimp in a little olive oil, garlic, lemon juice (optional), chicken stock and white wine and drizzle it on top of penne (or any kind of pasta).  What's nice about that sauce is that it goes well with chicken, and you can add onions, broccoli, cauliflower, or really whatever you like to please anyone.

Fettucini Caprese - I am not a huge tomato fan but I'm working on eating them more since they are so good for you.  A really fast and easy way to make a sauce is to slice up some tomatoes (Roma, heirloom, plum) and throw in a saute pan with some olive oil and a bit of garlic. The tomatoes release a lot of juice and once they are soft they make a delicious addition to some fettucine, fresh basil, and fresh sliced mozzarella. My version of caprese pasta!

Orzo with Cheesy Butter Sauce - not the healthiest option, but definitely one of the tastiest, this recipe can be used as a side or a main. Just toss cooked orzo with a generous amount of butter and parmesan cheese. Season with garlic powder and Italian seasoning. You can add peas, broccoli, shrimp, chicken, or whatever else you want to make tons of different versions of this dish. 

Refrigerated pasta - this stuff saves my butt almost every week when I don't feel like cooking. You can get tortellini, ravioli, gnocchi, all with different kinds of fillings. Add some pesto and a little bit of truffle oil to four cheese tortellini, mix some marinara with the gnocchi, the options are endless. Serve with some sliced carrots, cucumbers, and celery and you have a super fast easy meal that isn't boring at all!

The greatest thing about pasta is that pretty much anything goes. If you use ingredients you like, odds are you'll enjoy what you come up with! Just make sure you have lots of freshly grated Parmesan and you're golden!
