Saturday Night Lasagna & Bruschetta




Yesterday, we had Nick & Rachel over for dinner. They requested Italian food, so I jumped at the chance to make some homemade lasagna! I tried to call my mom to get her recipe, but I didn't reach her, so I researched a bunch of recipes until I found one that looked promising. I also found a really delicious-sounding bruschetta recipe, so off to the store we went! Upon arriving at Whole Foods, we saw a bunch of tents set up. They had local fisherman selling whole Keta Salmon for $3.99 a pound, just caught that morning in the sound. We got an entire fish for $22! I'm very excited for that :)

Both recipes came out fantastic! The bruschetta was a bit involved, but worth the effort for sure. The lasagna was surprisingly quick and easy! I used ground turkey instead of ground beef and let the sauce simmer for about an hour (instead of the 8 minutes the recipe called for). I also didn't use the spaghetti sauce seasoning packet, and instead used 2 tbsps Italian seasoning, 1 tbsp marjoram, and a dash of dried basil. The end results were tasty! I will say that the lasagna is very cheesy, which is totally fine with me, but some might find it a little too cheesy. Nick & Rachel brought over some delicious red wine which went with the food perfectly! We picked up a bunch of petit fours at the bakery for dessert. 

After dinner, we watched some scary movies and carved pumpkins!


It was a fun night and we had a great time :)
